Chocolate Angel Food Cake

You take a bit and it melts in your mouth. So soft and fluffy...almost like a cloud. Angel food cake is the tastiest cake and it is so fluffy. So tie on your apron and lets get started!
Ingredients:
1 1/2 c. icing sugar
1 c. cake flour (If you don't have cake flour you can use regular flour)
1/4 c. cocoa
1 1/2 c. egg white. 
1 1/2 tsp. cream of tartar
1/2 tsp. salt
1 c. sugar
Sift together icing sugar, flour and cocoa three times. 
Set aside. 
In a mixing bowl beat egg whites, cream of tartar, and salt until soft peaks form.
 Gradually add sugar 2 Tbsp. at a time, beating until stiff peaks form. 
Gradually fold in cocoa mixture, about a fourth at a time. 
Spoon into ungreased 10-inch tube pan.
 Carefully run a metal spatula or knife through batter to remove air pockets. Bake on lowest oven rack at 375 F for 35 - 40 min or until the top springs back when lightly touched and cracks feel dry. Immediately invert pan. Cool completely. Run a knife around edges and center tube to loosen, remove cake.
