Are you dreaming of curling up on the couch with a mug of hot chocolate and a fresh gooey cinnamon roll. Well dream no more! I am here today to help make your dream become reality...well at least that cinnamon roll. So tie on your apron and lets get started!
Dough:
1 Tbsp. yeast
1 c. warm milk
1/3 c. white sugar
1/2 c. soft butter
1 tsp. salt
2 eggs
4 c. flour
Heat milk, sugar, salt, and butter until milk is warm and butter is almost melted. (about 1 min.) Combine yeast and half the flour on speed 2 for 15 sec. Slowly add the milk mixture and eggs. beat for 30-60 sec. on speed 2. On speed 2 mix in the remaining flour 1/2 c. at a time. Mix until the dough cleans the sides of the bowl and clings to the hook. (about 2 min.) Let the dough rise for 1 hr.
Punch down and let it sit for 10 min. Roll the dough until it is 18" by 12". Spread the filling.
Filling:
1/4 c. soft butter
1 c. brown sugar
2-3 Tbsp. cinnamon
1-2 Tbsp. instant vanilla pudding mix
Stir together the brown sugar, cinnamon, and pudding mix. Crumble in the butter. Spread the mixture on the dough leaving a 1" border on the edge for sealing. Roll up the dough from the long side. Get the border wet and pinch it onto the rolled up part. Slice into 1 1/2" slices. Place in greased 9 X 13 pan. Let rise until it has doubled in size. (about 1/2-1 hr.)
Bake at 350 F for 20-25 min.
Icing:
1/2 c. soft butter
1 1/2 c. powdered sugar
1 oz. cream cheese
2 Tbsp. whipping cream
1 tsp. vanilla
pinch of salt
Beat until fluffy. When the rolls are hot, spread lots of icing on them.
