Almond Cupcakes

Being the good Dutch girl that I am, I love goodies with almonds in them...and many other things that Dutch people love. Almond cupcakes have three great Dutch foods; sugar, butter, and almonds. These cupcakes are very addicting and will keep you coming back for more. So tie on your apron and lets get started!
Ingredients:
1 tsp. baking soda
4 c. flour
1 1/3 c. brown sugar
1 1/3 c. white sugar
2 c. butter
2-3 eggs
4 tsp. almond flavouring 
slivered almonds
almond paste (recipe at the bottom of the post)

In mixer cream butter. Cream sugars until fluffy. 
Add eggs - reserving some egg white from one egg to glaze the cupcakes. Mix well. Add flavoring and mix well.
Combine flour and baking soda. Gradually add to butter mixture, beating well each time.
Fill mini muffin tin 1/3 full of batter. 
Roll into a ball.
Flatten. 
Spoon 1/4 - 1/2 tsp. almond filling on batter. (You can find the recipe at the end of the post or you can buy almond paste ready to use.)
 Add enough batter to cover the almond filling, but not fill the tin over 3/4 full. 
Brush with egg white. 
Put almond slivers on top. 
Bake at 350 F for 13-15 minutes.

 Almond Filling (Paste) 
3 c. ground almonds
3 c. icing sugar
3 eggs slightly beaten
2 tsp. lemon juice
1 1/2 almond extract
Stir together.
