Peanut Butter Balls (Moose Terds)

 
Peanut butter and rice krispies covered in chocolate. Now if you're saying "I don't know  Tasha. That doesn't sound to appetizing." You obviously haven't had peanut butter balls. They are so good and once you eat one you won't want to stop! So tie on your apron and lets get started!
Ingredients:
Cookie:
2 c. peanut butter
2 c. icing sugar
2 c. rice krispies
4 Tbsp. butter

Chocolate Coating:
1-2 c. chocolate chips
1-2 Tbsp. coconut oil

In mixer beat together peanut butter, icing sugar, and butter. Stir in rice krispies. 
Refrigerate for 1-2 hr. 
Put wax paper on cookie sheets. Scoop cookies onto the prepared cookie sheets (I use Pampered Chefs small cookie scoop.) 
Put in the freezer for 15-30 minutes. 
Roll into balls. If they get soft, put them in the freezer and start rolling another pan.
Put back in the freezer for 30 minutes.
Melt chocolate. Dip the balls into the melted chocolate. If they start getting too soft swap pans. 
Put in the freezer until completely frozen then drizzle with leftover chocolate. 

Moose terds was my Uncle's name for these cookies
