Turtle Shortbread

 
Pecans, caramel, and shortbread all in one; doesn't that sound good? Would you like to add a cookie like that to your Christmas goodie tray? Well, keep reading and you will be able to!😁 So tie on your apron and lets get started!
Ingredients:
Dough:
1 1/2 c. + 2 Tbsp. butter
1/2 c. sugar
1 tsp. vanilla extract
4 c. flour
1/2 tsp. salt
Dipping and Top:
24 caramels (Do 12 at a time with 2 Tbsp. milk)
1 c. chopped pecans
1/2 - 1 c. chocolate chips
1 - 2 tsp. shortening
6 dozen pecan halves

Heat oven to 350 F. In mixer cream butter and sugar. Beat in vanilla until fluffy. Stir in flour and salt. 
Divide dough into 12 equal parts. Roll each part into 1/4 inch thick circle and cut each circle into 6 wedges. 
Place wedges on ungreased cookie sheet and bake for 8-10 minutes or until set. Immediately remove from cookie sheet and cool completely. 
Microwave 12 of the caramels with 2 Tbsp. of milk. Stir in-between intervals. Boil water and put it in a bowl that your caramel bowl can sit on top of. Dip 2 straight edges into melted caramel, then into chopped pecans. When you run out melt the other 12 caramels. 
Melt the chocolate with the shortening. 
Place a nice sized dot of melted chocolate on the top of each cookie and place a pecan half on top. 
Drizzle remaining chocolate on top of cookies.
