Best Chocolate Cake

 

Big thanks to Alicia Marentette for this delicious cake recipe. It is the best homemade chocolate cake I have ever had. It's very moist and not dense. So tie on your apron and lets get started.

Cake:

Ingredients:

2 c. flour

1 2/3 c. sugar

2 tsp. instant coffee (Optional. This cake is great without it.)

2/3 c. cocoa powder

1 1/2 c. baking soda

1/2 tsp. baking powder

2/3 c. butter

1 1/2 c. water

3 eggs

1 tsp. vanilla

Preheat oven to 350 F. Grease 9 X 13 or two round cake pans. Mix dry ingredients in mixer. Add butter and mix into dry ingredients. Add water, eggs, and vanilla. Beat 4 minutes on medium speed. Pour into pans. 

Bake 30 minutes or until toothpick comes out clean.

 Cool and ice. 

Icing:

Ingredients:

1 1/2 c. butter

3 3/4 c. icing sugar

3/4 c. cocoa powder

3 - 4 Tbsp. milk of half-&-half

1 1/2 tsp. vanilla

Cream butter with hand mixer. Mix in cocoa, powdered sugar, milk, and vanilla, mixing after each is added. Beat until fluffy and a light colour. (We have found that half a recipe usually is sufficient.)
